Cinnamon Almond Biscuits

Ingredients:
- 100 g butter
- ½ tsp cinnamon
- 50 g sugar
- 150 g flour
- 1 egg
- 25 g chopped/flaked almonds
- 25 g cinnamon sugar
Preparation:
- Cream butter and sugar thoroughly. Add sifted flour and cinnamon and combine to make a dough.
- Press into a medium Swiss roll tin, flatten and smooth.
- Glaze with beaten egg, and prick with a fork. Sprinkle over the almonds, and then the cinnamon sugar.
- Bake at about 180° C for about 20 minutes. Cool slightly, then cut into fingers.
Makes about 30 biscuits.
