Cinnamon Almond Biscuits

Ingredients:

  • 100 g butter
  • ½ tsp cinnamon
  • 50 g sugar
  • 150 g flour
  • 1 egg
  • 25 g chopped/flaked almonds
  • 25 g cinnamon sugar

Preparation:

  • Cream butter and sugar thoroughly. Add sifted flour and cinnamon and combine to make a dough.
  • Press into a medium Swiss roll tin, flatten and smooth.
  • Glaze with beaten egg, and prick with a fork. Sprinkle over the almonds, and then the cinnamon sugar.
  • Bake at about 180° C for about 20 minutes. Cool slightly, then cut into fingers.

Makes about 30 biscuits.
