Mom’s Crunchies

They say that mom’s are best. But we will have to guess at the quantities of golden syrup and bi-carb!

Ingredients:

  • 1 cup sugar
  • 1 cup flour
  • pinch salt
  • ? tbl golden syrup
  • 1 cup coconut
  • 250 g margarine / butter
  • ? tsp bi-carb

Preparation:

  • Combine all dry ingredients, except bi-carb.
  • Melt syrup in shortening, then sprinkle in the bi-carb.
  • Stir, then pour into the dry ingredients and combine into a firm dough.
  • Place in a medium-sized Swiss Roll tin, rolling the surface to make it as smooth as possible.
  • Bake at 180° C for 10 – 15 minutes.
  • Allow to cool slightly, then cut into squares or rectangles.

Makes about 36 biscuits.
