Mom’s Crunchies

They say that mom’s are best. But we will have to guess at the quantities of golden syrup and bi-carb!
Ingredients:
- 1 cup sugar
- 1 cup flour
- pinch salt
- ? tbl golden syrup
- 1 cup coconut
- 250 g margarine / butter
- ? tsp bi-carb
Preparation:
- Combine all dry ingredients, except bi-carb.
- Melt syrup in shortening, then sprinkle in the bi-carb.
- Stir, then pour into the dry ingredients and combine into a firm dough.
- Place in a medium-sized Swiss Roll tin, rolling the surface to make it as smooth as possible.
- Bake at 180° C for 10 – 15 minutes.
- Allow to cool slightly, then cut into squares or rectangles.
Makes about 36 biscuits.
