Irish Soda Bread

There are as many recipes for Irish soda bread as there are Irish cooks. However, I particularly like this one because of the addition of mashed potato, which gives a moister, tastier loaf than those made with no potato. And, after all, potato is virtually the Irish national food!
Ingredients:
- 250 g flour
- 125 g self-raising flour
- 1 tsp bi-carb
- ¾ tsp salt
- ½ tsp sugar
- 20 g butter
- 2 medium potatoes, peeled, cooked, mashed
- 1¼ cups warmed buttermilk
- 1 egg, beaten
Preparation:
- Sift all the dry ingredients together in a bowl. Rub in the butter until the mixture looks crumbly. Mix in the mashed potato.
- Beat together the egg and buttermilk lightly, and pour into the dry ingredients. Mix to a softish dough.
- Form into a round loaf and place on a greased oven tray. With a very sharp knife or razor, mark the surface of the loaf into eight pieces.
- Dust with a little flour and bake at 180° C for 30-40 minutes. Cool before serving.
Notes:
- To make a soft crust, brush with melted butter while still hot.
- Best eaten on day of making.
Makes 1 medium loaf.
