Anne Devlin’s Banana Bread

Anne Devlin may not be well known, but her banana bread will soon be.
Ingredients:
- 1¾ cups flour
- ½ tsp salt
- 2 tsp baking powder
- 2/3 cup sugar
- ¼ tsp bi-carb
- 85 g soft butter / margarine
- 2 eggs
- 1 cup mashed bananas
- ½ cup chopped nuts (optional)
Preparation:
- Sift together dry ingredients. Add remaining ingredients and stir to make batter.
- Bake in greased and lined loaf tin at 180 C for about 1 hour.
- Recipe doubles successfully.
Makes 1 medium/large loaf.
