Beat ‘n Bake Cake

As simple as it comes.

Ingredients:

  • 150 g margarine
  • 250 g sugar
  • 3 large eggs
  • 290 g flour
  • 10 – 15 ml baking powder
  • ½ tsp salt
  • 50 ml water
  • 100 ml milk
  • 1 tsp vanilla

Preparation:

  • Sift together the flour, baking powder and salt. Combine together the water, milk and vanilla.
  • Place ingredients in bowl in the order listed. Beat at low – medium speed for 2 – 3 minutes.
  • Bake in shapes as desired. In loaf tin at 180° C for about 30 – 35 minutes; in layer tins at 190° C for about 20 minutes.

Notes:

  • For an alternate flavouring, the grated rind and juice of ½ – 1 lemon is especially good.
  • Use the lesser amount of baking powder at first. Only increase for later bakings if you find that the cake hasn’t risen to expectations. I find that the lesser amount is adequate, but the original recipe called for the larger amount.

Makes a small – medium cake.
