Date Loaf

A handful of chopped pecans or walnuts makes this good loaf even better.
Ingredients:
- 250 g dates, chopped
- ¾ cup sugar
- 1 cup water, boiling
- 250 g flour
- 1½ tsp baking powder
- 75 g margarine / butter
- 1 tsp bi-carb
- 1 tsp vanilla
- ¼ tsp salt
Preparation:
- Place dates, margarine / butter, sugar and bi-carb in a bowl.
- Pour over the boiling water and allow to stand until tepid.
- Stir in the vanilla.
- Sift together the dry ingredients, and fold into the mixture.
- Place in well greased / sprayed and base-lined 500 g loaf tin and bake for 50 to 55 minutes at 175° C.
Makes 1 loaf.
