Date Loaf

A handful of chopped pecans or walnuts makes this good loaf even better.

Ingredients:

  • 250 g dates, chopped
  • ¾ cup sugar
  • 1 cup water, boiling
  • 250 g flour
  • 1½ tsp baking powder
  • 75 g margarine / butter
  • 1 tsp bi-carb
  • 1 tsp vanilla
  • ¼ tsp salt

Preparation:

  • Place dates, margarine / butter, sugar and bi-carb in a bowl.
  • Pour over the boiling water and allow to stand until tepid.
  • Stir in the vanilla.
  • Sift together the dry ingredients, and fold into the mixture.
  • Place in well greased / sprayed and base-lined 500 g loaf tin and bake for 50 to 55 minutes at 175° C.

Makes 1 loaf.
