Maureen’s Baked Cheesecake

Ingredients: Base:
- 1 packet Digestive biscuits, crushed finely
- 1 tsp cinnamon
- ¾ cup sugar
- 1/3 cup soft butter
Ingredients: Filling:
- 3 eggs
- ¼ tsp salt
- 300 ml cream
- ¼ cup flour
- 7/8 cup sugar
- rind & juice of half a large lemon
- 500 g firm cottage/cream cheese
Preparation:
- Combine the base ingredients. Press into bottom and halfway up sides of23 – 25 cm springform tin. Reserve 3/4 cup for topping.
- Beat eggs and sugar well. Beat in lemon rind, juice and salt.
- Using a hand whisk fold in the cheese and the flour. Lastly add the cream.
- Pour into the crust. Sprinkle over the reserved topping, and trim the sides.
- Place on a large baking tray and bake at 160°- 165° C for about 1 hour. Cool in the oven.
Makes a large cheesecake – sufficient for at least 10 generous slices.
