Whiskey Tea Brack

Serve sliced and buttered. Keeps well.

Ingredients:

  • 225 g sultanas
  • 275 ml strong tea
  • 225 g raisins
  • 400 g self-raising flour
  • 225 g soft brown sugar
  • 2 eggs, beaten
  • ½ tsp cinnamon
  • ¼ tsp ground nutmeg
  • 2 tbl whiskey
  • marmalade/honey to glaze
  • demerara sugar to dust

Preparation:

  • Place fruit, sugar, spices, whiskey and tea in a large bowl and soak overnight.
  • Grease and line a 20 cm round/square tin.
  • Stir beaten eggs and flour into the fruit mixture, and turn into the tin.
  • Bake at 160° C for about minutes. Towards end of baking time, brush with marmalade/honey and sprinkle with demerara sugar.

Makes a medium cake.
