Whiskey Tea Brack

Serve sliced and buttered. Keeps well.
Ingredients:
- 225 g sultanas
- 275 ml strong tea
- 225 g raisins
- 400 g self-raising flour
- 225 g soft brown sugar
- 2 eggs, beaten
- ½ tsp cinnamon
- ¼ tsp ground nutmeg
- 2 tbl whiskey
- marmalade/honey to glaze
- demerara sugar to dust
Preparation:
- Place fruit, sugar, spices, whiskey and tea in a large bowl and soak overnight.
- Grease and line a 20 cm round/square tin.
- Stir beaten eggs and flour into the fruit mixture, and turn into the tin.
- Bake at 160° C for about minutes. Towards end of baking time, brush with marmalade/honey and sprinkle with demerara sugar.
Makes a medium cake.
