Super Easy Cheese Muffins

Quick, easy and the best available.

Ingredients:

  • 500 ml strong Chedder cheese, grated
  • 250 ml flour
  • 2½ tsp baking powder
  • 3 ml dry mustard
  • 1 egg
  • ? ml milk

Preparation:

  • Sift dry ingredients together, and mix in most of the cheese.
  • Break the egg into a 250 ml measuring cup, beat lightly, then add enough milk to fill the cup.
  • Add to the dry ingredients and stir until just combined.
  • Spoon into well-greased / sprayed muffin tins, until about two-thirds full.
  • Sprinkle the remaining cheese on top of the muffins.
  • Bake at 210° C for 15 to 20 minutes.

Variation:

3 ml of cayenne pepper will give a bit of a bite, and adding about 30 ml of chopped French chives turns them into a superb muffin. Baked in mini-muffin tins this variation makes a superb addition to a snack tray

Makes about 12 slightly smaller standard muffins.
