Super Easy Cheese Muffins

Quick, easy and the best available.
Ingredients:
- 500 ml strong Chedder cheese, grated
- 250 ml flour
- 2½ tsp baking powder
- 3 ml dry mustard
- 1 egg
- ? ml milk
Preparation:
- Sift dry ingredients together, and mix in most of the cheese.
- Break the egg into a 250 ml measuring cup, beat lightly, then add enough milk to fill the cup.
- Add to the dry ingredients and stir until just combined.
- Spoon into well-greased / sprayed muffin tins, until about two-thirds full.
- Sprinkle the remaining cheese on top of the muffins.
- Bake at 210° C for 15 to 20 minutes.
Variation:
3 ml of cayenne pepper will give a bit of a bite, and adding about 30 ml of chopped French chives turns them into a superb muffin. Baked in mini-muffin tins this variation makes a superb addition to a snack tray
Makes about 12 slightly smaller standard muffins.
