Pecan Pie (with Biscuits)

This must be served with a topping of whipped Chantilly cream, and an optional sprinkling of chopped toasted pecans.
Ingredients:
- 3 egg whites
- ½ tsp baking powder
- ½ tsp vanilla
- 250 ml sugar
- 16 TUC biscuits, broken
- 1 cup pecan nut pieces
Preparation:
- Whip whites until stiff. Continue beating and slowly add sugar in a steady stream, then add baking powder and vanilla.
- Gently fold in biscuits and nut pieces.
- Bake in a well-oiled 20 cm pie dish at 180° for 15 – 20 minutes.
Serves 6.
