Pecan Pie (with Biscuits)

This must be served with a topping of whipped Chantilly cream, and an optional sprinkling of chopped toasted pecans.

Ingredients:

  • 3 egg whites
  • ½ tsp baking powder
  • ½ tsp vanilla
  • 250 ml sugar
  • 16 TUC biscuits, broken
  • 1 cup pecan nut pieces

Preparation:

  • Whip whites until stiff. Continue beating and slowly add sugar in a steady stream, then add baking powder and vanilla.
  • Gently fold in biscuits and nut pieces.
  • Bake in a well-oiled 20 cm pie dish at 180° for 15 – 20 minutes.

Serves 6.
