Sweet and Sour Drumsticks

Golden brown Chinese style chicken drumsticks.
Ingredients:
- 8 chicken drumsticks (or other equivalent portions)
- 2 tbl tomato paste
- 2 tbl runny honey
- 1 garlic clove, crushed
- salt to taste
- black pepper, freshly ground, to taste
- 4 tbl red wine vinegar
- 2 tbl soy sauce
- 1 tbl Worcestershire Sauce
- ¼ tsp cayenne pepper
Preparation:
- Slash the drumsticks in two or three places to allow the marinade to penetrate (chicken may be skinned if liked), and place in a shallow non-reactive dish.
- Mix the remaining ingredients together and pour over the chicken. Rub the marinade into the chicken pieces and leave for at least 2 hours, or overnight in the refrigerator.
- Parcook in the microwave – about 5 minutes on high, then grill, either on a braai or under a preheated grill, brushing with marinade a few times during cooking, turning the chicken brown all over.
Alternative:
- The runny honey can be replaced by a mixture of palm sugar and honey – 1½ tbl palm sugar and ½ tbl honey.
