Easiest Ever Microwave Fish

A simple meal that can be prepared in minutes. Serve with boiled potatoes and a green vegetable, pouring over the juice from the fish.
Ingredients:
- 4 x 140-150 g fish fillets
- Zest of 1 lime / small lemon
- juice of 1 lime / small lemon
- few sprigs mint, roughly chopped
- salt
- pepper, freshly ground
- 3 tbl olive oil
Preparation:
- Whiz together the olive oil, zest, juice and mint.
- Place the fish in a single layer in a microwave dish. Season well with salt and pepper. Pour over the dressing / marinade.
- Cover with cling film, pierce in a couple of places. Microwave on high for 4 to 8 minutes until cooked through – check after 4 minutes, being careful not to overcook the fish.
Notes:
- Use any firm fleshy fish: salmon, snapper, kingklip, butter fish and so on – the nicer the fish the better the flavour
- Lime gives a better flavour, but lemons are easier to find in the shops
