Easiest Ever Microwave Fish

A simple meal that can be prepared in minutes. Serve with boiled potatoes and a green vegetable, pouring over the juice from the fish.

Ingredients:

  • 4 x 140-150 g fish fillets
  • Zest of 1 lime / small lemon
  • juice of 1 lime / small lemon
  • few sprigs mint, roughly chopped
  • salt
  • pepper, freshly ground
  • 3 tbl olive oil

Preparation:

  • Whiz together the olive oil, zest, juice and mint.
  • Place the fish in a single layer in a microwave dish. Season well with salt and pepper. Pour over the dressing / marinade.
  • Cover with cling film, pierce in a couple of places. Microwave on high for 4 to 8 minutes until cooked through – check after 4 minutes, being careful not to overcook the fish.

Notes:

  • Use any firm fleshy fish: salmon, snapper, kingklip, butter fish and so on – the nicer the fish the better the flavour
  • Lime gives a better flavour, but lemons are easier to find in the shops
