Salsiccia di Maiale

Home-made Italian sausage mixture.
Ingredients:
- 500 g minced pork
- 1 tsp salt
- 1 tsp black pepper, freshly ground
- 1 tsp rosemary leaves, finely chopped
- ½ tsp garlic, finely chopped
- 30 ml dry white wine
Preparation:
- Combine all ingredients in a bowl and mix thoroughly – hands are best.
- Wrap in plastic and refrigerate overnight before using – may also be frozen.
