Fettucine with Salmon and Mushrooms

Traditionally no cheese is served with this pasta.

Ingredients:

  • 1 tbl butter
  • 3 spring onions, chopped
  • 250 g button mushrooms, sliced
  • 250 ml heavy cream
  • 1 tbl concentrated tomato paste
  • 200 g tinned salmon
  • salt, to taste
  • black pepper, freshly ground, to taste
  • 500 g fettucine, cooked al dente

Preparation:

  • Gently cook the onions in the butter, until softened.
  • Increase the heat, add the mushrooms and cook for a couple of minutes. Add the cream and tomato paste and stir over low heat until the tomato paste is completely mixed in.
  • Drain the salmon, removing any skin and bones, and break it into chunks. Add to the sauce, and simmer till heated through.
  • Season to taste. Combine the sauce with the pasta and serve immediately.

Serves 4 – 6.
