Fettucine with Salmon and Mushrooms

Traditionally no cheese is served with this pasta.
Ingredients:
- 1 tbl butter
- 3 spring onions, chopped
- 250 g button mushrooms, sliced
- 250 ml heavy cream
- 1 tbl concentrated tomato paste
- 200 g tinned salmon
- salt, to taste
- black pepper, freshly ground, to taste
- 500 g fettucine, cooked al dente
Preparation:
- Gently cook the onions in the butter, until softened.
- Increase the heat, add the mushrooms and cook for a couple of minutes. Add the cream and tomato paste and stir over low heat until the tomato paste is completely mixed in.
- Drain the salmon, removing any skin and bones, and break it into chunks. Add to the sauce, and simmer till heated through.
- Season to taste. Combine the sauce with the pasta and serve immediately.
Serves 4 – 6.
