Pasta alla Buscaiola

Pasta with tuna and mushrooms. This is an traditional old pasta sauce, and no cheese is served with it.
Ingredients:
- 200 g button mushrooms, sliced
- 4-5 tbl olive oil
- 1 tin tuna
- salt, to taste
- black pepper, freshly ground, to taste
- 2-3 garlic cloves, crushed
- 1 x 450 g tin chopped tomatoes
- 450 gr medium pasta shells
- 2 tbl chopped parsley
Preparation:
- Fry mushrooms in half the oil until tender.
- Drain the tuna, flake and add to the mushrooms. Season with salt and lots of pepper.
- In another pan cook the garlic in the remaining oil until golden, stir in the tomatoes and simmer until thickened. Season to taste.
- Cook the pasta al dente, then drain, reserving a little of the cooking water.
- Toss with the tomato sauce, then add the tuna mixture and the parsley. Mix well together, adding a very little of the reserved water if the mixture seems dry. Serve immediately.
Serves 4 – 6.
