Cate’s Mandarin Salad

One of the simplest salads imaginable, but very delicious!

Ingredients: Salad:

  • 1 medium lettuce
  • 2 spring onions, chopped
  • 1 cup celery, sliced
  • 1 x 310 g tin mandarin oranges, drained
  • 1 – 2 tbl parsley, very finely chopped
  • ¼ cup flaked almonds, toasted

Ingredients: Dressing:

  • ¼ tsp salt
  • 1 tbl sugar
  • 1/8 tsp Tabasco, or to taste
  • 1 tbl tarragon vinegar
  • 1/8 cup oil
  • freshly ground pepper to taste

Preparation:

  • Wash and spin lettuce and tear into fairly large pieces.
  • Place in bowl with the other ingredients.
  • Make the dressing by whisking all the ingredients together thoroughly.
  • Just before serving toss the salad with the dressing, and scatter with the almonds.

Notes:

  • Make your own tarragon vinegar, by infusing some sprigs of tarragon in a small bottle of grape/wine vinegar for several weeks. Use in other salad dressings as well, for a slightly different taste. You can also use ordinary wine/grape vinegar in this salad, though it doesn’t taste quite as good.
