Cate’s Mandarin Salad

One of the simplest salads imaginable, but very delicious!
Ingredients: Salad:
- 1 medium lettuce
- 2 spring onions, chopped
- 1 cup celery, sliced
- 1 x 310 g tin mandarin oranges, drained
- 1 – 2 tbl parsley, very finely chopped
- ¼ cup flaked almonds, toasted
Ingredients: Dressing:
- ¼ tsp salt
- 1 tbl sugar
- 1/8 tsp Tabasco, or to taste
- 1 tbl tarragon vinegar
- 1/8 cup oil
- freshly ground pepper to taste
Preparation:
- Wash and spin lettuce and tear into fairly large pieces.
- Place in bowl with the other ingredients.
- Make the dressing by whisking all the ingredients together thoroughly.
- Just before serving toss the salad with the dressing, and scatter with the almonds.
Notes:
- Make your own tarragon vinegar, by infusing some sprigs of tarragon in a small bottle of grape/wine vinegar for several weeks. Use in other salad dressings as well, for a slightly different taste. You can also use ordinary wine/grape vinegar in this salad, though it doesn’t taste quite as good.
Serves 4 – 6.
