Coriander Cracked Wheat Salad

This is a wonderful accompaniment to Thai Green Curry Chicken Salad.
Ingredients:
- 179 gr bulgar/burghul/cracked wheat
- ½ tsp salt
- 4 tomatoes, peeled, seeded, finely diced
- ½ cucumber, deseeded, cut in 5mm dice
- 1 – 2 tbl fresh lemon juice
- 2 – 3 tbl dhania, finely chopped
- 2 tbl parsley, finely chopped
- 1 bunch spring onions, chopped finely
- 4 tbl olive oil
- salt & freshly ground black pepper
- 1 head of Cos lettuce, shredded
Preparation:
- Place the wheat and salt in a small saucepan with about 600 ml water. Bring to the boil and simmer for about 10 minutes – the wheat needs to retain some of its ‘bite’.
- Drain in a colander and allow to stand until cool. Squeeze the wheat in a dishcloth to remove as much moisture as possible, then turn it into a bowl.
- Add all the other ingredients, except the lettuce.
- Season, stir thoroughly together, and refrigerate.
- Line a shallow serving bowl with the lettuce. Check the seasoning of the salad, and place on top of the lettuce.
Notes:
- It is vital to deseed the cucumber, otherwise your salad will become watery.
- As an alternative to cracked wheat, cheat, and use couscous.
Serves about 8.
