South African Curried Green Bean Salad

All South African. Serve chilled.

Ingredients:

  • 30 ml vegetable oil
  • 30 ml medium curry powder
  • 30 ml cornflour
  • 200 ml sugar
  • 250 ml grape vinegar
  • 2 – 3 onions, thinly sliced
  • 5 ml turmeric
  • 500 g green beans, parcooked
  • 5 ml salt
  • 250 – 400 ml sultanas

Preparation:

  • Fry onions in oil until translucent.
  • Stir in the curry powder, turmeric and cornflour and stir-fry for another couple of minutes.
  • Add the sugar, salt and vinegar and bring to the boil, stirring.
  • Stir in the beans and sultanas, and simmer for about 15 minutes, or until thick and the beans are crisp-tender.
  • Remove from the heat, cool and refrigerate for 1 to 3 days.

Serves 8.
