South African Curried Green Bean Salad

All South African. Serve chilled.
Ingredients:
- 30 ml vegetable oil
- 30 ml medium curry powder
- 30 ml cornflour
- 200 ml sugar
- 250 ml grape vinegar
- 2 – 3 onions, thinly sliced
- 5 ml turmeric
- 500 g green beans, parcooked
- 5 ml salt
- 250 – 400 ml sultanas
Preparation:
- Fry onions in oil until translucent.
- Stir in the curry powder, turmeric and cornflour and stir-fry for another couple of minutes.
- Add the sugar, salt and vinegar and bring to the boil, stirring.
- Stir in the beans and sultanas, and simmer for about 15 minutes, or until thick and the beans are crisp-tender.
- Remove from the heat, cool and refrigerate for 1 to 3 days.
Serves 8.
