Sweet and Spicy Sweet Corn

Serve either at room temperature, or well chilled.
Ingredients:
- Approximately 1 kg fresh, cooked OR frozen, thawed sweet corn
- ½ red pepper
- ½ green pepper
- 1 small (preferably red) onion, diced
- 4 tbl red wine vinegar
- 1 tbl dark brown sugar
- 2 tbl vegetable oil
- ½ tsp dried oregano
- sSalt & freshly ground pepper to taste
Preparation:
- Cut the peppers into 2.5 cm long batons, and place them in a bowl with the sweet corn and chopped onion—have the sweet corn slightly warm for the dressing to penetrate.
- Whisk together the vinegar, sugar, salt and pepper thoroughly. Add the oil and oregano and whisk again.
- Pour over the salad and toss together. Check the seasoning.
Serves 10 – 12.
