Thai Rice Salad

Create a dramatic effect by serving in halved pineapple shells.
Ingredients: Salad:
- 340 g jasmine rice
- 1 tbl green cardamom pods
- 1 tsp whole cloves
- 1 cinnamon stick, broken
- 2 tsp salt
- Ingredients: Dressing:
- 2 tbl lemon juice
- 5 tbl vegetable oil
- 4 spring onions, chopped
Preparation:
- Wash the rice in several changes of water.
- Place the rice, salt and spices in a saucepan with 1½ litres of water.
- Bring to the boil and cook for about 8 – 12 minutes.
- Drain thoroughly, removing the whole spices, if wished.
- Mix together the dressing ingredients, and pour over the rice. Chill until required.
Serves 6.
