Thai Rice Salad

Create a dramatic effect by serving in halved pineapple shells.

Ingredients: Salad:

  • 340 g jasmine rice
  • 1 tbl green cardamom pods
  • 1 tsp whole cloves
  • 1 cinnamon stick, broken
  • 2 tsp salt
  • Ingredients: Dressing:
  • 2 tbl lemon juice
  • 5 tbl vegetable oil
  • 4 spring onions, chopped

Preparation:

  • Wash the rice in several changes of water.
  • Place the rice, salt and spices in a saucepan with 1½ litres of water.
  • Bring to the boil and cook for about 8 – 12 minutes.
  • Drain thoroughly, removing the whole spices, if wished.
  • Mix together the dressing ingredients, and pour over the rice. Chill until required.

Serves 6.
