Pistachio / Cashew Nut Sauce

This is very delicious with all grilled lamb, chicken and white fish. It may also be served with the Aubergine and Red Pepper salad, giving it some crunch and lifting it to an even higher level of fabulous!
Ingredients:
- 150 g pistachio or cashew nuts
- ½ lemon, grated zest and juice of
- 1 tbl orange blossom water (optional)
- 1 garlic clove, crushed
- 1 small bunch parsley, finely chopped
- 1 few mint leaves, chopped
- 1 tbl water
- 3-5 tbl best quality extra-virgin olive oil
- sea salt
- black pepper, freshly ground
Preparation:
- Roughly chop, blitz or blend the nuts – be careful not to make this too smooth, it must be quite chunky.
- In a mixing bowl combine with the rest of the ingredients. Check the seasoning.
- If you do not use the orange blossom water, you might find that the mixture is a bit dry, so use a little more water.
Makes about 1 cup.
