Soy Mustard Vinaigrette

A fairly sharp strongly-flavoured sauces that is excellent served with something plain like fried fish (which you have first dipped into a mixture of breadcrumbs and sesame seeds), or grilled fish or meat. This isn’t a child-friendly sauce.
Ingredients:
- 2 tbl grained mustard
- ½-1 tsp made English mustard
- 2 tbl caster sugar
- 2 tbl rice wine vinegar
- 2 tbl soy sauce (Kikkoman is the best)
- 5 Tbl vegetable oil
Preparation:
- Whisk together all the ingredients, except the oil, until the sugar has dissolved.
- Then, whisking constantly, trickle in the oil.
Notes:
- If preferred, use a mixture of vegetable and peanut oil, or vegetable and a very small amount of sesame oil.
Makes about 200 ml.
