My Health Bread

This loaf keeps fairly well.

Ingredients:

  • 25-30 g fresh yeast
  • 1 cup milk
  • 2-3 tbl oil
  • 2 tbl honey
  • 2 cups brown bread flour
  • 4 tsp salt
  • ¼ cup toasted sesame seeds
  • ½ cup sunflower seeds (toasted, if liked)
  • 1 tbl brown sugar
  • about 1¼ cups boiling water
  • 2 tbl molasses
  • 1 cup white flour
  • 2 cups Nutty Wheat/Crackley Wheat
  • ½ cup wheatgerm
  • ¼ cup poppy seeds

Preparation:

  • Dissolve the sugar, molasses and honey in the water. Add fridge-cold milk and dissolve the yeast in the mixture.
  • Mix together all the dry ingredients, make a well and pour in the yeast mixture.
  • Stir with a spoon until a dough is formed, and beat until the dough starts to leave the sides of the bowl – this is a soft dough that does not require kneading.
  • Place the dough into a well-greased large loaf pan. Brush the top with milk and sprinkle with seeds as desired.
  • Leave to prove until it has increased in volume by about one-third.
  • Bake at about 200° C for about 50 minutes. Check its doneness by knocking on the base of the loaf with your knuckles – it should sound hollow when cooked through.

Makes one large loaf.
