My Health Bread
This loaf keeps fairly well.
Ingredients:
- 25-30 g fresh yeast
- 1 cup milk
- 2-3 tbl oil
- 2 tbl honey
- 2 cups brown bread flour
- 4 tsp salt
- ¼ cup toasted sesame seeds
- ½ cup sunflower seeds (toasted, if liked)
- 1 tbl brown sugar
- about 1¼ cups boiling water
- 2 tbl molasses
- 1 cup white flour
- 2 cups Nutty Wheat/Crackley Wheat
- ½ cup wheatgerm
- ¼ cup poppy seeds
Preparation:
- Dissolve the sugar, molasses and honey in the water. Add fridge-cold milk and dissolve the yeast in the mixture.
- Mix together all the dry ingredients, make a well and pour in the yeast mixture.
- Stir with a spoon until a dough is formed, and beat until the dough starts to leave the sides of the bowl – this is a soft dough that does not require kneading.
- Place the dough into a well-greased large loaf pan. Brush the top with milk and sprinkle with seeds as desired.
- Leave to prove until it has increased in volume by about one-third.
- Bake at about 200° C for about 50 minutes. Check its doneness by knocking on the base of the loaf with your knuckles – it should sound hollow when cooked through.
Makes one large loaf.
