Avocado Discolouration

It is possible to keep avocados from discolouring for quite a while using the following method. Place them in a bowl, and pour boiling water over them. Allow to stand for 1 to 2 minutes, depending on the thickness of the skin. Remove, then plunge into cold water for a minute or two. Peel and use shortly before needed. A little lemon juice is an extra safeguard, and they shouldn’t discolour for at least a couple of hours. Bananas which you are going to use as a sambal with a curry may be treated in the same way. It isn’t quit as effective though, and they should be served within an hour of preparation.
