Note on Pasta Salads

Personally I don’t really like pasta salads – my feeling is that pasta is meant to be eaten hot. However, I seem to be in the minority as most people seem to really like them.

The two most important things to remember when making a pasta salad are:

  1. the dressing must be really very well flavoured, since pasta, the main ingredient, is rather bland; and
  2. in about 90% of cases the dressing must be stirred through the pasta while the pasta is still hot.

The third thing, but this is a personal feeling, dressings must not be ‘gooey’, ie loaded with mayonnaise, tomato sauce and such like. This was the old-fashioned way – rinse the pasta cold, then smother it with goo – ugh! However, there are still some people who like their pasta salads like this.
