Using Gelatine

There seems to be a mystique about using gelatine, but a long as you remember a couple of simple rules it’s easy-peasy. ‘Sponge’ gelatine by soaking it in the quantity of liquid specified – always add the gelatine to the liquid and not the other way round. Make sure that the gelatine is completely dissolved before adding it to the other ingredients. Try, as far as possible, to have the gelatine and the other ingredients at a similar temperature. When adding gelatine always work quickly, stirring as you pour in the gelatine – get someone to hold the bowl or stand it on a wet cloth so that you have both hands free to pour while you stir – the get in the mould as quickly as possible.
