Cheese Pudding Crumble

A very accommodating recipe, very easy to throw together in a hurry, pretty economical (depends on what you add as extras – quite a good way to use bits and pieces from the ‘fridge), and is enjoyed by both vegetarians and non-vegetarians alike.
Ingredients:
- 1 cup soft breadcrumbs
- 300 ml milk
- 125 g grated sharp cheese
- 2 eggs
- 50 g butter/margarine
- salt and freshly ground pepper
- pinch ground nutmeg
- ½ – 1 tsp mustard powder
Preparation:
- Dissolve the butter in the milk and pour over the breadcrumbs. Allow to soak for about 30 minutes.
- Add cheese, well-beaten eggs and seasoning to taste.
- Pour into greased baking dish, and bake at 180 C for about 20 – 30 minutes, or until well-risen and golden brown.
Variations:
- This may be varied with all sorts of additions : for vegetarians some sautéed mushrooms, or vegetarian sausage slices, or chopped tomatoes and so on. For non-vegetarians : chopped ham, or crisp chopped bacon, or fried chipolatas and so on.
