Crunchy Corn Fritters with Grilled Courgettes

Ingredients:
- 1 large bunch basil, shredded
- 225 ml milk
- 175 g flour
- 2 eggs
- 2 ml paprika
- 5 ml baking powder
- 5 ml sugar
- salt & freshly ground black pepper
- 410 g tin corn kernels, drained
- 30 ml olive oil
- 300 g courgettes, cut lengthwise
- olive oil for brushing
Preparation:
- Whisk together basil, milk, flour, eggs, paprika, baking powder, sugar,, salt and pepper to a thick smooth batter, then fold in corn.
- Cook two large pancakes/fritters in a large frying pan in the 30 ml olive oil.
- Grill the slices of courgettes on a griddle, season to taste.
- Stack on top of the pancakes and, if liked, serve with mascarpone, creme fraiche, or a flavoured cream cheese.
Serves 2.
